Tasting Notes

Offering a pleasant mix of red and dark fruit, this is one Paso Cabernet that brings fruit and savory flavors together beautifully. On the nose, aromas of clove, nutmeg and cardamon compliment tobacco and cedar notes. Red and black currants, alongside dried cherries and smoked meat give tremendous depth to the flavor profile on the palate. Firm tannins frame the broad structure of this wine, and the savory and spice notes linger to a beautiful dry finish.

An homage to Samuel Coleridge’s The Rime of the Ancient Mariner, our wines are a tribute to the time-honored tradition of stewarding the land and braving the elements to produce wines of character that are rooted in story.
